Egyptian fried fish

Ingredients       

2 kg fish (preferably Sultan Ibrahim)

Salt

3 tbsp cumin

2 head garlic (or fresh thyme)

Oil for frying

Flour for coating

 

Method             

Rub cleaned fish with salt and leave aside for 2 hours. During this time crush garlic and mix it with cumin. Stuff fish with garlic mix and leave aside for 1 hour. (The garlic may be replaced by fresh thyme). Roll fish in flour then deep fry till golden. Serve with fries/baked potatoes and green salad.
